Vegan Cashew Chow Mein

This simple and quick recipe is perfect for a midweek dinner.

What You Need:

2 Handfuls Cashews
1 pinch of Golden Caster Sugar
2 Teaspoons of Chinese 5 Spice
4 Tablespoons of Vegan Soy Sauce (I use This )
600g Thin Soba Noodles (Get there here )
5 Cloves of Garlic
Medium knob of Ginger
2 Tablespoons Coconut oil (or sesame)
5 Spring Onions
2 Handfuls of Edame Beans Frozen
2 Radishes
2 Tablespoons of Sesame Seeds
Handful Fresh Corriander

 

How To Make:

Simply start by prepping all the ingredients, crush the Garlic Cloves right down, peel and finely grate the ginger and thinly slice the spring onions.

Bring a large Saucepan to the heat add in 1 tablespoon of coconut oil and wait until melted. Once hot add in the spring onion, Ginger and Garlic. Cook for 2 Minutes.

Meanwhile, bring a separate pan of water to the boil and follow the noddle cooking instructions.

Next, Add the Cashews and Edame Beans, allowing to cook for a further 2 minutes.

Mix in the 5 spice, Soy Sauce and sugar along with the remainder of the oil, stirring continuously.

Once the noodles are cooked add these as well as half of the coriander and sesame seeds and mix together for around 5 minutes.

Remove from the heat and serve in bowls with sliced radish, sesame seeds, coriander and an extra slug of Soy on top.

Chocolate Treats

The Other weekend me and Josh were setting off to Central London, for some shopping and to see the iconic Harrods Christmas lights! They really do make you feel christmassy. We then went in to see if we could see any decorations for the tree that tickled our fancy, and on the way to the Christmas hall, got completely distracted by the Godiva Chocolate Cafe, and boy what a great distraction it was. With so much chocolate around I think anyone would struggle not going in there.

We were seated really quickly, but then we were left with the difficult decision of what type/form of chocolate should we get? Hot chocolate, cold chocolate drinks,white, Milk or dark, fondue, cake, crepes or chocolates. I mean seriously I’ve never seen such a variety of ways chocolate can be done. So finally having spent a fair bit of time choosing our decisions were made. I opted for a white hot chocolate and josh a dark hot chocolate, along with a chocolate cake layered with mouse and genâche served with a hot chocolate sauce. Essentially chocolate on chocolate.
Yes, it was delicious, yes it was sickly!  It really is a great place to take that Chocolate lover in your life.

Halkidiki, Greece

Hey long time no speak! I have just come back from a truly beautiful holiday with Josh. It was a week long in what felt like paradise! We flew into Thessaloniki, Greece last Thursday, from there we hired a car and drove to the first peninsular (Kassandra) it was around an hour and a hal drive, but so easy. We arrived late at night to the hotel in Pefkohori Anna Maria Paradise – the area really was a paradise. We woke up earliest ate a buffet breakfast at the hotel and headed to the beach straight away. What a beautiful site, white beaches and beautiful blue clear seas!

From there we also then walked into the town where we discovered ice creams were only €1 this made it for us the rest of the holiday was filled with ice creams! They were very delicious too.

We then walked along to the end of the prominade and stopped in a restaurant called Asterias for a light lunch. It was cheap, delicious and a big portion, we ordered a Greek salad each and this filled us right up. Yum!

The next few days were spent in the clear blue waters, sipping cocktails in the beautiful sunshine. It was so lovely and relaxing, we spent a day on a boat that we rented out exploring the coastline from a different angle, this was such great fun – and cheap too!

We also took a day out to the other side of the peninsular where we went to a sulphur spa – not going to lie I forgot what sulphur smelt like until I went there and it’s not a pleasant smell at all, think rotten egg. None the less we gave it a go, we did only last no longer than 5mins. Then we headed straight to the nearest beach where we did some snorkelling and checked out some of the amazing views.

That evening we treated ourselves to a delicious meal out to trip advisors number #3 restaurant called Bakalis, right on the sea front it was a brilliant location . Where we ordered veg, salad and seafood, there was just so much, we ended up with a table full of food which we both gradually throughout the night made it through. It was slightly pricier here but well worth it. All the food was booming with flavour!  We then took a night walk along the beach and back to our hotel where the Greeks were having a party at the bar that we were invited to join in on, so much fun glasses getting smashed (in true Greek style) and shots flowing!

Our time was nearly up in this beautiful part of the world, we spent our last day in a slightly different way, in Thessaloniki the second city of Greece. A lovely place (very hot) but lots to see, the old walls of the city (what’s left) that were built BC, Aristole square and the White Tower. Some great sites to visit and really we didn’t have enough time to explore the markets and more of the city. 

     
All I can do is massively recommend this place to go and explore we found so much out, history and culture as well as the tourist things to go and do. The people, are lovely and just so helpful too! 

Sweet Potato Brownies

From the deliciously ella buzz I have made some of her yummy sweet potato brownies just to try for myself and I really can’t recommend them enough! As healthier treat as possible and refined sugar free! The ones I made are shown below!

With lots of natural goodness here is the recipe
Makes 10 thick brownies (mine are thin so I made more)
– 600g sweet potatoes (2 medium to large) – great blood sugar regulators, anti inflammatory and antioxidants
– 80g of ground almonds
– 100g brown rice flour
– 14 medjool dates
– 4 tablespoons of raw cacao – a great superfood with magnesium, manganese, sulphur and packed with antioxidants
– 3 tablespoons of pure maple syrup

1. Pre-heat the oven to 180C (fan oven).
2. Steam the sweet photos until very soft.
3. Once sweet potatoes are soft, put into a food processor with pitted dates and combine.
4. Put all other ingredients into a bowl and then add in the sweet potato and date mix.
5. Put into a lined baking dish and cook for around 20mins until you’re able to place a fork into the mixture and it comes out clean.
6. Remove the tray from the oven and allow to cool for 10mins. This allows the mixture to combine.
7. Then remove the brownies from the tray and cool for a further 10mins.
8. Cut into squares then tuck in and enjoy.
