Vegan Cashew Chow Mein

This simple and quick recipe is perfect for a midweek dinner.

What You Need:

2 Handfuls Cashews
1 pinch of Golden Caster Sugar
2 Teaspoons of Chinese 5 Spice
4 Tablespoons of Vegan Soy Sauce (I use This )
600g Thin Soba Noodles (Get there here )
5 Cloves of Garlic
Medium knob of Ginger
2 Tablespoons Coconut oil (or sesame)
5 Spring Onions
2 Handfuls of Edame Beans Frozen
2 Radishes
2 Tablespoons of Sesame Seeds
Handful Fresh Corriander

 

How To Make:

Simply start by prepping all the ingredients, crush the Garlic Cloves right down, peel and finely grate the ginger and thinly slice the spring onions.

Bring a large Saucepan to the heat add in 1 tablespoon of coconut oil and wait until melted. Once hot add in the spring onion, Ginger and Garlic. Cook for 2 Minutes.

Meanwhile, bring a separate pan of water to the boil and follow the noddle cooking instructions.

Next, Add the Cashews and Edame Beans, allowing to cook for a further 2 minutes.

Mix in the 5 spice, Soy Sauce and sugar along with the remainder of the oil, stirring continuously.

Once the noodles are cooked add these as well as half of the coriander and sesame seeds and mix together for around 5 minutes.

Remove from the heat and serve in bowls with sliced radish, sesame seeds, coriander and an extra slug of Soy on top.

Wedding Wednesday

So after the journey of the last 2-3weeks you should now have, venue, photographer and videographer. Depending on the time you have between when you get engaged and when you get married, it’s good to take sometime enjoying being engaged. We found that the venue, photographer and videographer were the things that got booked up quickly. So for a month at least we’ve taken a side step from the wedding and enjoyed being engaged! My Facebook feed is covered in so many “last Christmas as a Miss” items, it gets me all excited so here are my top 5 last Christmas as a miss items I’ve come across!

Hello January

Well Christmas and New year Flew by didn’t it just? As most of you probably know from my Social Media Sites I was lucky enough to have got engaged! So January for me so far has been pedal to the metal organising and planning, who knew you had to book a venue and service like 2 years in advance? Crazy! but so Exciting
So much for my quiet January this year…

So as you do in January January, I have set myself a few blogging goals this year, which I wanted to share with you all to get me started!

Goal 1: Blog fortnightly! – no more hit and miss blog posts once every 2 Months! I am aiming for consistency.. (lets face it I am going to need a break from all this planning)

Goal 2: Be more socially active. This means “hello…I’ll be popping up in blogger chats on twitter”

Goal 3: Grow my online following by 10% – I’m hoping this will come from more consistent blog posts and increasing my engagement going to blogger chats. (fingers crossed)

So that’s me! What are your goals this year?

Easy Granola

I have been super busy these post months! But I have got some delicious recipes and some great things to talk about so keep your eyes peeled and your bellies ready for a treat!
This is the first of a few recipes to try this is a delicious breakfast treat you can prepare at the weekends ready for the week (if you can keep it in the Jar that long).
**please note all the ingredients I use are Organic

You’ll need:

  • A variety of nuts, I use raw Cashews and Almonds – 2 handfuls of each
  • Seeds – I use raw Sunflower Seeds -2handfuls
  • Goji Berries – 1handful
  • Oats – 4handfuls
  • Desicated Coconut – 1handful
  • Acacia Honey -2-3tablespoons
  • Pinch of Salf
  • Dash of cinamon
  • 1/3 of a vanilla pod

To make:
(this step is optional) Soak the nuts seeds and Goji Berries in water for a minimum of an hour.*
Pre heat the oven to 150°C (fan).
In a bowl mix the berries and nuts with the oats,Acacia honey, Salt, Cinamon and Vanilla.
Take a sheet of baking paper and lay the mix down evenly.
Place in the oven untill starting to brown.
Sprinkle the Desicated Coconut over the browning mixture and place back into the oven.
Once golden brown remove from the oven and leave on the side to cool.
Place into an drystore pot and serve portions for breakfast along with almond milk, and fresh berries.

*I soak the nuts, seeds and berries to release any toxins and help with digestion.

 

Cauliflower Base Pizza

So for my birthday I was super lucky and a great friend brought me a brilliant book by ‘Sarah Wilson’ called ‘I Quit Sugar’. This is a truely delicious cauliflower based pizza and it’s super healthy too! I’ve adapted the recipe myself but you can pretty much put whatever you want onto it. I couldn’t not share this with you all!

A great way to eat healthily and deliciously this January,  

So to make this delicious pizza (enough for 2), you will need;

For the base:

1 cauliflower- grated, cooked, drained and cooled

100g goats cheese

1 egg

Sea salt and pepper to taste
Topping:

2 tablespoons of Passata

4  tenderstem Broccoli  stalks

1 finely sliced red onion

2 eggs 

And whatever else you fancy really
To start pre-heat the oven to 200C. So to make the base mix all the ingredients together. Flatten the mixture out to around 1cm thick onto baking trays the mixture can make 2 large or 4 small pizzas spending on how you want to divide the mixture. Cook these for around 30-40min until the base is crusty.

Remove these from the oven and the add your topping, really this can be of your choice or you can use my suggestion. If using my suggestion, smear the Passata over the base and lay your toppings on top leaving the egg till last. Find somewhere to crack the egg, and then place into the oven for a further 10-15 mins (or until the egg is cooked)

Serve warm and enjoy!

Chocolate Treats

The Other weekend me and Josh were setting off to Central London, for some shopping and to see the iconic Harrods Christmas lights! They really do make you feel christmassy. We then went in to see if we could see any decorations for the tree that tickled our fancy, and on the way to the Christmas hall, got completely distracted by the Godiva Chocolate Cafe, and boy what a great distraction it was. With so much chocolate around I think anyone would struggle not going in there.

We were seated really quickly, but then we were left with the difficult decision of what type/form of chocolate should we get? Hot chocolate, cold chocolate drinks,white, Milk or dark, fondue, cake, crepes or chocolates. I mean seriously I’ve never seen such a variety of ways chocolate can be done. So finally having spent a fair bit of time choosing our decisions were made. I opted for a white hot chocolate and josh a dark hot chocolate, along with a chocolate cake layered with mouse and genâche served with a hot chocolate sauce. Essentially chocolate on chocolate.
Yes, it was delicious, yes it was sickly!  It really is a great place to take that Chocolate lover in your life.

Benefit Haul

Benefit Roller Lash and Sun beam
Having recently had a benefit makeover I made a couple of purchases (I definitely have a couple more to make). For me as soon as I saw these two product they were an initial must.

1. Roller lash – I can’t believe I hadn’t tried this before. It does wonders to my eyelashes. This is a new mascara by benefit and I have heard a lot about it, but I guess you never really believe something until you see it for yourself, and now I’ve tried it, I can’t say I’ll ever go back. I’ve had a few high end brand mascaras , Guerlain, Dior and Lancôme to name a few and none have done what benefits roller lash does. It extends my eye lashes and really opens up my eyes. I now cannot recommend this enough to anyone.

2. Sun Beam – This is an absolute essential for a bronzed highlight sitting on the cheek bones it gives the face an instant summer glow – with a slight shimmer. It’s easy application and light on the skin it was perfect for what I wanted. A brilliant beachy look comes very easy with this product. Keep that summer glow this Autumn.

Treat your taste buds

treat your taste budsLast week I was lucky enough to visit Gordon Ramsay’s 3 Michelin Star restaurant in Chelsea! It was by far the most flavoursome experience I have had to date! The food was simply divine, out of this world tasty. It is an expensive place to eat however  ‘you get what you pay for’ really is what you have to remember here, the service was flawlessly do food unexplainabley good. All I can say is that this is somewhere you have to go to really understand what it’s like. So for now I hope you enjoy the photos! If you’ve been to a Michelin star restaurant I’d love yo know your experiences and recommendations too! So my thought for the day is go and Treat those taste buds, they deserve it.

Breakfast in Bed

This is a post about how great it is having breakfast in bed, especially on a rainy day like today! This morning I was trying out 2 products, that I have not tried before.

The first I tried was Rosy-Lee, which really does make a great traditionally strong cuppa. Personally I love the branding, playing on the cockney rhyme it’s a brilliant idea and a great product. Check out the site here for more information.

.The second I tried out was a granola, that is home made and uses organic ingredients. I have tried a fair few granola brands and this is by far one of the nicest out there. It was made by a company who are currently based in West London ( I am hoping they expand to the South) as I would love to order more. The company is called Breakfast in Bed and they deliver all sorts of breakfasts to people in West London, check out the website to see what else they can deliver here.

The new kid on the block

bus card copySo Monday was my first time attending a blogger event, and it was just so much fun. Being so new to blogging I was lucky enough to be a plus one for  Khrissieloves. It was a great way for myself as a newbie to get to meet lots of different food brands and create some great connections.
If you are new to blogging and off to your first blogging event one necessity to take along is a business card with email, blog address and twitter handle, you can see mine on the left.

Everyone at the event was so friendly, So make sure you’re ready to chat until your heart is content!

Something I would like to remember to do next time is take lots of photo’s, I don’t feel like I took enough this time!
